Pineapple Chicken


Pineapple Chicken

garlic salt
3-5 lbs of chicken pieces (sometimes I do less)
cornstarch
beaten egg (I usually use 2)

Sprinkle garlic salt on chicken pieces.  Dip in cornstarch & then in egg.  Fry in oil until browned.  (I don't wait for it to get too hot because 1. I'm impatient & 2.  I don't want a grease fire which we have had once when Isaac was trying to make potato pancakes).  Place chicken in a casserole dish, pour the sauce over the chicken and bake at 350 for 45 minutes.  Serve over rice.

Sauce:
1/2 c sugar
4 Tbs ketchup 
1/2 c vinegar
1 Tbs soy sauce
1 c (1 can) crushed pineapple  (pineapple chunks are good too, but not the same)
1/2 tsp salt

Mix & bring ingredients to a boil.
