Whole Wheat Zucchini Muffins


  • 1 large zucchini
  • 1 cup packed light-brown sugar
  • 2 tablespoons granulated sugar
  • 2/3 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon salt

Preheat oven to 350 degrees. Lightly coat a 9-by-5-by-3-inch loaf pan with cooking spray, and set aside. Grate zucchini on the large holes of a box grater (to yield 1 3/4 cups); set aside. In a large bowl, whisk together sugars, oil, vanilla, and eggs.

Into a small bowl, sift together flour, baking powder, baking soda, cinnamon and salt. Add flour mixture to egg mixture, and stir to combine well. Stir in grated zucchini.

Pour batter into prepared pan, spreading evenly. Bake until a toothpick inserted in center of loaf comes out clean, 45 to 55 minutes. Cool in pan 10 minutes; invert onto a wire rack, then reinvert, top side up. Cool completely before slicing.

Irish Soda Bread

IRISH SODA BREAD


  •  4 c. Flour
  • 1 c. Raisins 
  • 1 t. Baking soda 
  • 1 T. Caraway seeds 
  • 1 t. Salt
  • 1 1/3 c. Buttermilk, more or less 
  • 1 c. Sugar 
  • 3/4 c. Butter 
 Sift flour, soda, salt & sugar together. With pastry blender cut in butter till coarse like cornmeal. Stir in raisins & caraway seeds. (I usually put the raisins in about a cup or so of water and pop them in the microwave for a minute to plump up the raisins from their little dry state so they won't be all hard and burnt when they are baked in the bread). Add milk gradually (may need a little more depending on the humidity that day). Mix till blended. Knead on floured board for around 2 minutes. Divide dough into 2 pieces. Round each 1/2 of dough & flatten a little. Place kitty corner on cookie sheet. Cut diagonal lines in top of each rounded loaf. Bake about 1 hr. at 350 degrees. Enjoy!!!

The Best Pumpkin Bread

1 C butter, softened
3 C sugar
3 eggs
3 C all-purpose flour
1 Tbsp. baking powder
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1 1/2 tsp ground cloves
1 1/2 tsp ground nutmeg
1 (16 oz) can solid pack pumpkin

In a mixing bowl, cream butter and sugar. Add eggs; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Stir in pumpkin. Pour into 2 greased loaf pans. Bake at 350' for 1 hour. Check with toothpick.

I found this on allrecipes.com and made it for my primary class last Sunday. They had all brought their scriptures  several weeks in a row and I promised them a treat. They were thrilled with this. And I have tried many different recipes for Pumpkin Bread, but Isaac and I have decided that this one is our favorite. It is very moist. Isaac exclaimed as he pulled it out of the oven that this was the best looking bread we have ever made. So we've decided it's a keeper.

This can be made into small muffins for small mouths. You can also add chocolate chips.

White Bread in the Bread Machine

1 C water
1 tsp salt
2 Tbsp vegetable oil
2 Tbsp white sugar
2 Tbsp dry milk powder
3 C white flour
1 1/4 tsp yeast

Toss into bread machine and start.
Very light and fluffy.

Whole Wheat Bread in the Bread Machine

  • 1 1/2 C plus 2 Tbsp water
  • 2 Tbsp vegetable oil
  • 1 1/2 tsp salt
  • 1/3 C brown sugar
  • 4 1/4 C whole wheat flour
  • 3 Tbsp nonfat dry milk
  • 2 tsp active dry yeast
Place ingredients in bread pan in order listed. When adding the yeast last, make a small well with your finger to place the yeast. This will insure the proper timing of the yeast reaction. Use Whole Wheat or Timed Cycle.

Very quick and easy way to have healthy, homemade whole wheat bread! Serve with soup or stew, make a sandwich with it, toast it and spread jam on it. It's good so many ways!

Whole Wheat Banana Bread

  • 1/3 C vegetable oil
  • 1/2 C honey
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 C mashed bananas
  • 1 3/4 C whole wheat lour
  • 1/2 tsp salt 1 tsp baking soda
  • 1/4C hot water
1. Preheat oven to 325.
2. In a large vowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Spread batter into a greased loaf pan.
3. Bake for 55-60 minutes. Cool on wire rack for 1/2 hour before slicing.

Pioneer Stew and Pioneer Bread



I make this for Pioneer Day every year!

Pioneer Stew

1 C flour
2 Tbsp salt
1 tsp pepper
3 lbs round steak
1/2 C butter or vegetable oil
6 C water
2 Tbsp vinegar
2 tsp sugar
2 bay leaves
4 carrots, peeled and sliced
4 potatoes, peeled and diced
2 onions, chopped
2 C chopped tomatoes
2 cloves garlic, minced

Combine flour, salt, and pepper and place on the surface of a cutting board. Place half of round stea on top. With a mallet, pound flour into both sides of meat. (I don't have a mallet, so I skip that part). Repeat process with other half of meat. Cut meat into bite sized pieces. In a Dutch oven or other large oven-proof pot, heat butter or oil over medium heat. Add stew meat and brown well. Add water, vinegar, sugar, bay leaves, carrots, potatoes, onions, tomatoes, and garlic. Cover and bake at 325 degrees for 2 hours. Remove covering and cook for an additional hour or until meat is tender and stew is thickened. Makes about 12 cups.

Also works with venison if you happen to be one of those with that in your freezer. I prefer the steak myself though.

Pioneer Bread

1 (0.25 oz) pkg yeast
2 Tbsp sugar
1/2 C warm water
1 C hot milk (not boiling)
2 tsp salt
1/2 C dark molasses
1/2 C butter or margerine
1 C cold ilk
1 egg, beaten
5 1/2 C whole wheat flour

In a small bowl mix together yeast, sugar and war water. Set aside and let rise until foamy. In a large bowl combine hot milk, salt, molasses, and butter until dissolved. Add flour and stir until well blended. Put into two well-greased loaf pans. Let rise about one hour. Bake at 350 for about 35 minutes. Best when served warm.

Beehive Honey Butter

Great spread for the Pioneer Bread.

1 C honey
1 C butter, softened
1 tsp vanilla

Combine all 3 ingredients. Beat with an electric mixer on high speed for about 3 minutes until thickened. Put into jars and refrigerate. Lasts a long time in the fridge.

Pumpkin Chocolate Chip Bread



Pumpkin Chocolate Chip Bread


1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup granulated sugar
one can (15 oz) pumpkin puree
2 large eggs
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chocolate chips


Preheat oven to 350 degrees;. Butter a loaf pan; set aside. In a mixer, cream butter and sugar with pumpkin until light and fluffy. Add eggs, and beat till combined.
In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add sour cream, and vanilla; mix to combine. Stir in chocolate chips, and pour into prepared pan.

Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
