Macaroni and Cheese

  • 1 pkg elbow pasta, cooked
  • 1/2 C. bread crumbs
  • 1/4 C. Parmesan cheese
  • 5 Tbsp. butter
  • 1/4 C. flour
  • 3 1/2 C. whole milk
  • 1 lb. shredded sharp cheddar cheese
  • 2 tsp. salt
  1. Mix bread crumbs and parmesan cheese in small bowl; set aside. 
  2. Heat butter in large sauce pan on medium until melted. Add flour; stir until smooth. Cook 3-4 minutes until light golden brown. 
  3. Add milk to butter mixture, one cup at a time, whisking continuously until very smooth; bring to a boil. Cook 10 minutes on medium, whisking continuously. 
  4. Add cheddar cheese; stir until melted completely. Season with salt (and pepper). Stir in cooked pasta. 
  5. Spray bottom and sides of baking dish with nonstick cooking spray; add pasta/cheese mixture. Top with bread crumb mixture. 
  6. Bake on center rack 15-20 min, or until topping is golden brown and bubbling around edges. 
Tastes good even without bread crumbs.

Worms in Dirt






Worms in Dirt Recipe:

Ingredients:

1 16-ounce package Oreo type cookies

2 cups cold milk

1 pkg. small Chocolate Instant Pudding

1 tub (8 oz.) Whipped Topping , thawed slightly

individual serving cups

Gummy worms

Directions:

CRUSH cookies in zipper-style plastic bag with rolling pin or use a food processor.

POUR cold milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Let stand 5 minutes. Stir in whipped topping and 1/2 of the crushed cookies.

PLACE about 1 tablespoon crushed cookies into each cup. Fill cups about 3/4 full with pudding mixture. Top with remaining crushed cookies.

REFRIGERATE until ready to serve. Garnish with gummy worms just before serving. Yields about 8 servings.


Puffy Pancakes


Puffy Pancakes

I got this from my sister-in-law Stacey's blog and I make it for my nephew Gregory all the time. It is his favorite! And he can even help make it. 

3 eggs
1/2 cup milk
1/2 cup flour
pinch salt
2 tablespoons unsalted butter, melted.

Double the recipe. 
Whisk eggs and milk until well blended. Add the flour and the salt, whisk well (batter will look lumpy). Add the butter and whisk again. Pour into cake pan. Bake at 450 for 15 minutes.
Serve with real maple syrup!
